My name is Tom. In my mid-30s, and I’m a cook—not a chef. Maybe one day my work will become an art. For now, it is a craft I’m proud to keep learning.

What I love most about cooking is the movement of it: the rhythm of service, the precision of a clean cut, and the familiar weight of the tools I carry into the kitchen. A good knife becomes part of that rhythm. Its steel, edge, balance and shape all work together, turning an ordinary task into something genuinely satisfying.

Chef Knife Reviews grew from that fascination. The knives featured here are tested by me and other working cooks—people who use them during real preparation and real service. We care about how a knife feels after hours of work, how well it holds its edge, and whether we would choose to carry it into the kitchen again.

We focus on Chinese knife makers such as Xinzuo and Hezhen because we have used their knives and genuinely loved them. Their best work combines excellent steel, thoughtful design and impressive craftsmanship. These are not simply affordable alternatives.

This site is our place to examine those knives closely, share what we discover and help other cooks find tools they will enjoy using as much as we do.
