67-layer Damascus 10Cr15CoMoV run at 60-62 HRC holds a fine edge through weeks of use and touches up cleanly on a 1000/6000 stone. Because a deba takes lateral load when levering through bone, keep the edge slightly less acute than a slicer and strop between sessions.
Ergonomics
