A 10Cr15CoMoV core is clad in 67 layers of damascus, giving the familiar rippled pattern, and the blade is ground thin behind the edge with a gentle belly for slicing. The rosewood handle and stainless bolster keep the look classic rather than flashy.
Edge retention
10Cr15CoMoV at around 60 HRC is the workhorse steel of this category. It arrives sharp, cuts cleanly through tomato skin and citrus peel, and responds quickly to a few passes on a ceramic rod. For home volumes it will go weeks between touch-ups.
Ergonomics
Light and nimble in hand, it sits between a paring knife and a chef knife — the size you grab for sandwiches, cheese, shallots, and trimming. Balance falls right at the bolster, so it is comfortable in a pinch grip without feeling blade-heavy.
