This is a purpose-built bone cleaver, not a Chinese chef knife with cleaver looks. The blade is a full 7 inches long with a tall profile and a genuinely thick spine, ground with a robust convex edge instead of a keen laser bevel. X5Cr15MoV is the stainless most European chopping tools use — tough, chromium-rich, and forgiving. The red sandalwood handle is properly seated with brass rivets and finished smooth. It looks like a butcher's tool because it is one.

Edge retention

X5Cr15MoV run soft (around 56 HRC) is the right call for a bone cleaver. You want an edge that deforms rather than chips when it hits bone, and this steel does exactly that. A pass on a medium stone or a steel rod restores the edge in seconds. Don't try to take it to a mirror finish — a slightly toothy 20° per side edge is what you want for chopping poultry, pork ribs, or splitting a chicken.

Ergonomics

Balance sits forward of the bolster, which is exactly what a chopper wants — you let gravity and the head weight do the work rather than muscling the cut. The sandalwood handle is comfortable in a full grip and warms up quickly in the hand.
