Design

This is the Ji series scaled down to a 135 mm utility blade: 12Cr18MoV core clad in 67 layers of Damascus, ebony handle, stainless bolster. The profile is a gentle-bellied petty shape with a fine tip, ground thin behind the edge so it falls through soft produce rather than pushing it. Fit and finish match the larger Ji knives — even bevels, clean plunge line, no gaps at the bolster.

Edge retention

The same 12Cr18MoV core used across the Ji line at HRC 60±2. On a knife this small, edge retention is rarely the limiting factor — most of its work is soft, and it will go a month of daily use before it feels dull. It takes a keen edge fast on a 1000-grit stone and responds well to a few strops between sharpenings.

Ergonomics

At this length the knife is genuinely nimble. It's comfortable in a pinch grip on the board for shallots, garlic and herbs, and equally at home in hand for peeling, coring or trimming fat. Balance sits right at the bolster, so it never feels tip-heavy. The ebony is smooth and slightly grippy when wet — better than the plastic scales on cheaper utility knives.

Value

$67 buys a real Damascus-clad utility knife with a wood handle, which is unusual at this size — most cooks default to a $15 stamped petty. If you already own a Ji chef knife or bunka and want a matching small knife that does the fiddly work, this is the obvious pick. If you're buying your first Xinzuo, start with a chef knife and add this second.
